Big T’s Catch Of The Day: Mega Crockpot Mashed Potatoes

Requests for Big T’s Killer Crockpot Lasagne are still coming in, so I thought I’d share my recipe for these super good and super easy crockpot mashed potatoes. I recently brought these to a potluck we had for the Ron and Don Show, and they got inhaled!
Also, with the holidays coming up they are really easy to either make part of your dinner, or take to a gathering. They’re kind of like twice baked potatoes in a crockpot. Try ’em and let me know what you think, and we’ll have some cooking surprises for you in the near future from Big T’s kitchen.
5 pounds of potatoes – skins on
1 tbs minced garlic
8 oz sour cream
8 oz cream cheese, softened
8 oz medium or sharp cheddar cheese, shredded
Bacon bits
Green onions, finely chopped
Half ‘n half
Butter
Slice potatoes into chunks and cook in salted water until done.
Drain and mash potatoes. Add sour cream, cream cheese & garlic. Beat with hand mixer until smooth and creamy.
If you need more moisture, add half ‘n half.
Fold in cheese, bacon bits & green onions.
Turn into greased (buttered) crockpot.
Cover with terrycloth towel before putting lid on, as it absorbs excess moisture.
Cook on low for 2-3 hours. Stir occasionally so potatoes don’t brown against sides of crockpot.
Serve right out of the crockpot—potatoes will stay warm throughout the meal.
